GOLD at the 2023 Winemaker Challenge Competition
Tasting Notes: Delicious aromas of boysenberry and dark cherry, with secondary notes of fresh herbs and tobacco. Well balanced with high tannins.
Food Pairings: There is no better pairing than Cab Sauv and red meat, including prime rib, filet mignon and burgers. For vegetarians, try an eggplant parmesan.
About the Wine: In 2019 we were fortunate enough to source Cab from two vineyards in Napa Valley: Kelly Vineyards and Shooting Star Vineyards. The Shooting Star Vineyard is located in the northeast corner of Napa Valley in a distinct wine-producing area called Pope Valley. Although not an official AVA, it is located just 14 miles from St. Helena & is nestled in between the sub-appellations of Howell Mountain & the Chiles Valley District. This is our first time sourcing from this vineyard and we are very excited to share this wine with you! Once the fruit arrived in Oceanside, we destemmed and processed it here on site. The grapes then fermented for about 2 weeks. After pressing, the wine was aged for 28 months in 20% new and 80% once used French Oak before being bottled in January 2022.
