Blanc de Noir is traditionally a white sparkling wine made from Pinot Noir, by quickly separating the juice from the skins to prevent any color in the wine. This results in a richer white wine that exhibits bolder flavors than a Blanc de Blanc (made from white grapes). We sourced the fruit for our take on a Blanc de Noir from Slusser Vineyard, which is located in the middle of reach of the Russian River Valley. With a characteristically cool climate (thanks to the coastal fog!), the Russian River Valley is producing some of the world's best Chardonnays & Pinot Noirs. In our take of a Blanc de Noir, we blended Chardonnay with our Pinot Noir to create a Rose. We then sent the fermented wine to South Coast Winery in Temecula where they completed the sparkling process in the Charmat Method. They pressurize the wine in a tank where they then add yeast and sugar which initiates the secondary fermentation (and creates the bubbles!). After, they filter the wine into another tank to remove the lees before the wine is bottled under pressure.
